Ingredients

Scale
  • 2 medium zucchinis, sliced
  • 1 onion, diced
  • 1 cup shredded cheese
  • 1/2 cup almond flour
  • 2 eggs
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchinis and dice the onion.
  3. In a bowl, mix zucchinis, onion, cheese, almond flour, eggs, olive oil, salt, pepper, and garlic powder.
  4. Pour mixture into a greased baking dish.
  5. Bake for 35-40 minutes or until golden brown.
  6. Let cool slightly before serving.
