Ingredients

- 2 medium zucchinis, sliced
- 1 onion, diced
- 1 cup shredded cheese
- 1/2 cup almond flour
- 2 eggs
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
Instructions
- Preheat oven to 375°F (190°C).
- Slice zucchinis and dice the onion.
- In a bowl, mix zucchinis, onion, cheese, almond flour, eggs, olive oil, salt, pepper, and garlic powder.
- Pour mixture into a greased baking dish.
- Bake for 35-40 minutes or until golden brown.
- Let cool slightly before serving.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Substitute almond flour with coconut flour if needed.
