Description

A healthy and delicious sugar-free zucchini bread that’s perfect for breakfast or a snack.


Ingredients

Scale
  • 2 cups grated zucchini
  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1/4 cup erythritol or stevia
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a loaf pan or line with parchment paper.
  3. In a bowl, mix almond flour, coconut flour, baking soda, cinnamon, and salt.
  4. In another bowl, whisk eggs, erythritol, applesauce, and vanilla extract.
  5. Fold in grated zucchini.
  6. Combine wet and dry ingredients and mix well.
  7. Pour batter into the loaf pan.
  8. Bake for 45–50 minutes or until a toothpick comes out clean.
  9. Let cool before slicing.

  • Squeeze excess water from grated zucchini to prevent a soggy texture.
