A quick and healthy stir fry using tofu and vegetables, perfect for a sugar-free diet.
Ingredients

- 200g firm tofu, cubed
- 1 tbsp olive oil
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tbsp soy sauce (sugar-free)
- 1 tsp ginger, grated
- 1 tsp sesame oil
- 1/4 tsp red pepper flakes (optional)
Instructions
- Heat olive oil in a pan over medium heat.
- Add tofu and cook until golden brown, about 5 minutes.
- Add garlic and ginger, sauté for 30 seconds.
- Add bell pepper, carrot, and broccoli. Stir-fry for 4-5 minutes.
- Pour in soy sauce and sesame oil. Mix well.
- Sprinkle red pepper flakes if desired. Serve hot.
Notes
- Use extra-firm tofu for better texture.
- Adjust vegetables based on preference.
- For extra flavor, add a splash of lime juice.
