- 1 1/2 cups almond flour

- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C).
- Mix mashed sweet potato, coconut oil, eggs, and vanilla extract.
- Add almond flour, baking powder, cinnamon, nutmeg, sweetener, and salt.
- Stir until combined.
- Spoon batter into muffin cups.
- Bake for 20-25 minutes or until firm.
- Let cool before serving.
Notes
- Use ripe sweet potatoes for natural sweetness.
- Store in an airtight container for up to 3 days.
- Replace almond flour with oat flour if preferred.
