Ingredients

- 2 cups chopped carrots
- 2 cups chopped zucchini
- 2 cups chopped bell peppers
- 1 cup chopped red onion
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried rosemary
- 1 tsp dried thyme
Instructions
- Preheat oven to 200°C (400°F).
- Toss all vegetables with olive oil, salt, pepper, rosemary, and thyme.
- Spread vegetables evenly on a baking tray.
- Roast for 25-30 minutes until tender and slightly browned.
- Remove from oven and serve warm.
