Description

A rich and creamy sugar-free pistachio chocolate fudge that’s low in carbs and full of flavor.


Ingredients

Scale
  • 1 cup unsalted pistachios, shelled
  • 1/2 cup sugar-free chocolate chips
  • 1/4 cup coconut oil
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 cup powdered erythritol
  • Pinch of salt

Instructions

  1. Line a small baking dish with parchment paper.
  2. In a food processor, blend pistachios until finely chopped.
  3. In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring between each.
  4. Stir in heavy cream, vanilla extract, erythritol, and salt.
  5. Fold in chopped pistachios.
  6. Pour mixture into the prepared dish and spread evenly.
  7. Refrigerate for at least 2 hours until firm.
  8. Cut into squares and serve.

Notes

  • For a nut-free version, replace pistachios with sunflower seeds.
