- 1/2 cup sugar substitute (erythritol or stevia)

- For frosting: 1 cup mascarpone cheese

Instructions
- Preheat oven to 350°F (175°C). Grease a cake pan.
- Mix almond flour, crushed pistachios, sugar substitute, baking powder, and salt.
- Add eggs, melted butter, and vanilla extract. Stir until smooth.
- Pour batter into the pan and bake for 30-35 minutes until golden.
- Let the cake cool completely.
- For frosting, whip mascarpone, heavy cream, and sugar substitute until creamy.
- Spread frosting over the cooled cake and garnish with extra pistachios.
