Ingredients

  • 2 cups almond flour
  • 1/2 cup crushed pistachios
  • 1/2 cup sugar substitute (erythritol or stevia)
  • 3 eggs
  • 1/2 cup melted butter
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • For frosting: 1 cup mascarpone cheese
  • 1/4 cup heavy cream
  • 1/4 cup powdered sugar substitute

Instructions

  1. Preheat oven to 350°F (175°C). Grease a cake pan.
  2. Mix almond flour, crushed pistachios, sugar substitute, baking powder, and salt.
  3. Add eggs, melted butter, and vanilla extract. Stir until smooth.
  4. Pour batter into the pan and bake for 30-35 minutes until golden.
  5. Let the cake cool completely.
  6. For frosting, whip mascarpone, heavy cream, and sugar substitute until creamy.
  7. Spread frosting over the cooled cake and garnish with extra pistachios.
