- 1/2 cup protein powder (vanilla or unflavored)
- 1/4 cup almond flour
- 1 large egg
- 1/4 cup sugar-free sweetener (like erythritol)
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Mix peanut butter, protein powder, almond flour, egg, sweetener, vanilla extract, baking soda, and salt in a bowl.
- Stir until well combined into a thick dough.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Flatten each ball with a fork in a crisscross pattern.
- Bake for 10-12 minutes or until edges are lightly golden.
- Let cool before serving.
Notes
- Store in an airtight container for up to 5 days.
- For a crunchier texture, bake for an extra 2 minutes.
- Adjust sweetness to taste by adding more or less sweetener.
