Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup granulated erythritol
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup melted coconut oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup sugar-free chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix almond flour, coconut flour, shredded coconut, erythritol, cinnamon, baking powder, and salt.
  3. Add melted coconut oil, egg, and vanilla extract. Stir until well combined.
  4. Fold in sugar-free chocolate chips if using.
  5. Scoop dough into 12 portions and flatten slightly on the baking sheet.
