- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup unsweetened shredded coconut
- 1/4 cup granulated erythritol
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup melted coconut oil
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup sugar-free chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix almond flour, coconut flour, shredded coconut, erythritol, cinnamon, baking powder, and salt.
- Add melted coconut oil, egg, and vanilla extract. Stir until well combined.
- Fold in sugar-free chocolate chips if using.
- Scoop dough into 12 portions and flatten slightly on the baking sheet.
- Bake for 12-15 minutes or until edges turn golden.
- Let cool before serving.
Notes
- Store in an airtight container for up to 5 days.
- For crispier cookies, bake 1-2 minutes longer.
