Description

Sugar-free oatmeal raisin cookies made with natural sweeteners and wholesome ingredients.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 cup almond flour
  • 1/4 cup unsweetened applesauce
  • 2 tbsp coconut oil (melted)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup raisins
  • 2 tbsp erythritol or stevia (for sweetness)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix oats, whole wheat flour, almond flour, cinnamon, baking soda, and salt.
  3. In another bowl, combine applesauce, melted coconut oil, vanilla, and sweetener.
  4. Add the dry ingredients to the wet mixture and stir until well combined.
  5. Fold in the raisins.
  6. Scoop tablespoon-sized portions onto the baking sheet and flatten slightly.
  7. Bake for 12-15 minutes or until edges turn golden.
  8. Let cool before serving.

Notes

  • Store in an airtight container for up to 5 days.
  • Substitute raisins with dried cranberries if preferred.
  • For crispier cookies, bake a few minutes longer.
