Sugar-free oatmeal raisin cookies made with natural sweeteners and wholesome ingredients.

- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/4 cup almond flour
- 1/4 cup unsweetened applesauce
- 2 tbsp coconut oil (melted)
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/3 cup raisins
- 2 tbsp erythritol or stevia (for sweetness)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix oats, whole wheat flour, almond flour, cinnamon, baking soda, and salt.
- In another bowl, combine applesauce, melted coconut oil, vanilla, and sweetener.
- Add the dry ingredients to the wet mixture and stir until well combined.
- Fold in the raisins.
- Scoop tablespoon-sized portions onto the baking sheet and flatten slightly.
- Bake for 12-15 minutes or until edges turn golden.
- Let cool before serving.
Notes
- Store in an airtight container for up to 5 days.
- Substitute raisins with dried cranberries if preferred.
- For crispier cookies, bake a few minutes longer.
