Ingredients

- 2 cups cooked chickpeas
- 1 onion, diced
- 3 garlic cloves, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/4 tsp cinnamon
- 4 cups vegetable broth
- 1 tbsp tomato paste
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, carrot, and celery. Sauté for 5 minutes.
- Stir in cumin, paprika, turmeric, and cinnamon. Cook for 1 minute.
- Add chickpeas, vegetable broth, and tomato paste. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Blend half the soup for a creamy texture (optional).
- Add lemon juice, salt, and pepper. Stir well.
- Garnish with fresh cilantro before serving.
Notes
- For extra spice, add a pinch of cayenne pepper.
- Store leftovers in an airtight container for up to 3 days.
