Ingredients

- 1 cup cooked lentils
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan (or nutritional yeast for vegan)
- 1 egg (or flax egg for vegan)
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Mash cooked lentils in a bowl.
- Add breadcrumbs, Parmesan, egg, garlic, oregano, basil, salt, and pepper. Mix well.
- Shape mixture into small balls.
- Heat olive oil in a pan and lightly brown meatballs on all sides.
- Transfer to a baking sheet and bake for 15 minutes.
- Serve hot with your favorite sauce.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Freeze uncooked meatballs for later use.
