- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup unsweetened shredded coconut
- 1/4 cup melted coconut oil
- 2 eggs
- 1/4 cup sugar-free sweetener (such as erythritol)
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix almond flour, coconut flour, shredded coconut, and salt. Add melted coconut oil and stir until crumbly.
- Press the mixture into the prepared pan to form an even crust. Bake for 10 minutes.
- In another bowl, whisk eggs, sugar-free sweetener, lemon juice, lemon zest, and vanilla extract.
- Pour the lemon mixture over the baked crust. Return to the oven and bake for 15-20 minutes until set.
- Allow to cool completely before slicing into bars.
