Delicious sugar-free lemon bars with a low-carb almond flour crust.
Ingredients

- 1.5 cups almond flour
- 1/4 cup melted butter
- 2 tbsp granulated sweetener (erythritol or stevia)
- 3 large eggs
- 1/2 cup lemon juice
- 1 tsp lemon zest
- 1/4 cup granulated sweetener (for filling)
- 1 tbsp powdered sweetener (for dusting, optional)
Instructions
- Preheat oven to 350°F (175°C).
- Mix almond flour, melted butter, and 2 tbsp sweetener for the crust. Press into a lined baking pan.
- Bake crust for 10-12 minutes until lightly golden.
- Whisk eggs, lemon juice, lemon zest, and 1/4 cup sweetener for the filling.
- Pour filling over the baked crust and return to the oven for 15-20 minutes until set.
- Let cool, then dust with powdered sweetener if desired.
- Cut into bars and serve.
Notes
- Store in an airtight container in the fridge for up to 5 days.
- Use fresh lemon juice for the best flavor.
- Adjust sweetness to taste.
