- 1/4 cup erythritol (or preferred sugar substitute)
- 2 egg whites
- 1 tsp vanilla extract

Instructions
- Preheat oven to 325°F (165°C).
- Mix shredded coconut, almond flour, and erythritol in a bowl.
- Add egg whites, vanilla extract, and salt. Stir until well combined.
- Scoop small portions onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
- Let cool before serving.
