- 2 cups unsweetened shredded coconut
- 1/2 cup coconut cream
- 1/4 cup powdered erythritol
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup sugar-free dark chocolate, chopped
- 1 tbsp coconut oil
Instructions
- Mix shredded coconut, coconut cream, powdered erythritol, vanilla extract, and salt in a bowl.
- Press the mixture into a lined square baking dish and freeze for 30 minutes.
- Cut into bars and place on a parchment-lined tray.
- Melt sugar-free chocolate with coconut oil.
- Coat each bar with melted chocolate and let it set.

- Store in the fridge for up to a week.
- Use a sugar-free chocolate with at least 85% cocoa.
