Ingredients

- 2 cups almond flour
- 1/2 cup melted butter
- 1/4 cup erythritol
- 1 tsp vanilla extract
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 tbsp lemon juice
- 1 tbsp chia seeds
- 1/4 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C) and line a baking dish with parchment paper.
- Mix almond flour, melted butter, erythritol, and vanilla extract until combined.
- Press half the dough into the baking dish to form the crust.
- In a bowl, toss berries with lemon juice, chia seeds, and cinnamon.
- Spread berry mixture over the crust.
- Crumble remaining dough over the berries.
- Bake for 30 minutes or until golden brown.
- Let cool before slicing into bars.
Notes
- Store bars in an airtight container for up to 5 days.
- Use any sugar-free sweetener instead of erythritol.
- Frozen berries work well if thawed and drained.
