Ingredients

  • 2 cups almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup coconut oil, melted
  • 1/4 cup erythritol or preferred sugar substitute
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sugar-free dark chocolate chips
  • 1/4 cup chopped almonds

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix almond flour, shredded coconut, baking powder, and salt.
  3. In another bowl, whisk coconut oil, sugar substitute, egg, and vanilla extract.
  4. Combine wet and dry ingredients. Fold in chocolate chips and almonds.
  5. Drop tablespoon-sized dough onto the baking sheet. Flatten slightly.
  6. Bake for 12-15 minutes until edges are golden.
  7. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
