- 1/2 cup erythritol or preferred sugar substitute
- 1/4 cup coconut flour
- 1 tbsp baking powder
- 1/4 tsp salt
- 4 large eggs
- 1/2 cup unsweetened almond milk
- 1/4 cup melted butter or coconut oil
- 2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a bowl, mix almond flour, erythritol, coconut flour, baking powder, and salt.
- In another bowl, whisk eggs, almond milk, melted butter, and vanilla extract.
- Combine wet and dry ingredients, stirring until smooth.
- Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before frosting or serving.

- For frosting, use a sugar-free option like whipped cream sweetened with erythritol.
