A crunchy, sugar-free almond biscotti perfect for dipping in coffee or tea.
Ingredients

- 2 cups almond flour
- 1/2 cup erythritol
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup chopped almonds
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix almond flour, erythritol, baking powder, and salt in a bowl.
- Add eggs and vanilla extract. Stir until dough forms.
- Fold in chopped almonds.
- Shape dough into a log on the baking sheet.
- Bake for 25 minutes. Let cool for 10 minutes.
- Slice into biscotti pieces. Bake for another 10 minutes.
Notes
- Store in an airtight container for up to a week.
- For extra crunch, bake longer in the second round.
