A moist and flavorful banana bread without added sugar, sweetened naturally with ripe bananas and enhanced with crunchy pecans.
Ingredients

- 3 ripe bananas, mashed
- 1/3 cup melted coconut oil
- 2 eggs
- 1 tsp vanilla extract
- 1 3/4 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup chopped pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix mashed bananas, coconut oil, eggs, and vanilla.
- In another bowl, combine flour, baking soda, salt, and cinnamon.
- Add dry ingredients to wet ingredients and mix until just combined.
- Fold in chopped pecans.
- Pour batter into the loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Use very ripe bananas for natural sweetness.
- You can substitute walnuts for pecans if preferred.
- Store leftovers in an airtight container for up to 3 days.
