- 1 1/2 cups almond flour
- 1/2 cup coconut flour
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp salt
- 2 eggs
- 1/4 cup unsweetened applesauce
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1/4 cup sugar-free maple syrup
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix almond flour, coconut flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
- In another bowl, whisk eggs, applesauce, coconut oil, vanilla, and sugar-free maple syrup.
- Combine wet and dry ingredients, stirring until smooth.
- Spoon batter into muffin cups, filling each 3/4 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- Use a sugar substitute if a sweeter taste is desired.
