Ingredients

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp salt
  • 2 eggs
  • 1/4 cup unsweetened applesauce
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup sugar-free maple syrup

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix almond flour, coconut flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, whisk eggs, applesauce, coconut oil, vanilla, and sugar-free maple syrup.
  4. Combine wet and dry ingredients, stirring until smooth.
  5. Spoon batter into muffin cups, filling each 3/4 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool before serving.
