Ingredients

- 2 cups almond flour
- 1/2 cup coconut flour
- 1/4 cup maple syrup
- 2 tbsp molasses
- 1 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- 1/4 tsp baking soda
- 1 egg
- 2 tbsp coconut oil, melted
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix almond flour, coconut flour, cinnamon, ginger, cloves, nutmeg, and baking soda in a bowl.
- In another bowl, whisk maple syrup, molasses, egg, and melted coconut oil.
- Combine wet and dry ingredients. Mix until dough forms.
- Roll dough between two sheets of parchment paper to 1/4-inch thickness.
- Cut shapes using gingerbread man cookie cutter.
- Transfer cookies to baking sheet. Bake for 10-12 minutes.
- Cool on wire rack before serving.
