Ingredients

- 1 cup grated carrots
- 1 cup almond flour
- 1/2 cup dates, pitted
- 1/4 cup shredded coconut
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 1 tbsp coconut oil
Instructions
- Blend dates in a food processor until smooth.
- Add grated carrots, almond flour, coconut, cinnamon, vanilla extract, and coconut oil.
- Pulse until well combined.
- Roll mixture into small balls.
- Refrigerate for 30 minutes before serving.

- Store in an airtight container in the fridge for up to 5 days.
- For extra flavor, roll bites in additional shredded coconut.
