Ingredients

- 1 medium butternut squash, peeled and cubed
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until translucent.
- Add minced garlic and cook for 1 minute.
- Add cubed butternut squash and stir well.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 20-25 minutes until squash is tender.
- Blend the soup until smooth using an immersion blender or regular blender.
- Stir in cinnamon, nutmeg, salt, and pepper.
- Serve warm.
Notes
- For extra creaminess, add a splash of coconut milk.
- Store leftovers in an airtight container for up to 3 days.
