Description

A creamy and flavorful butternut squash soup made without added sugar, perfect for a healthy and comforting meal.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Add minced garlic and cook for 1 minute.
  4. Add cubed butternut squash and stir well.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 20-25 minutes until squash is tender.
  7. Blend the soup until smooth using an immersion blender or regular blender.
  8. Stir in cinnamon, nutmeg, salt, and pepper.
  9. Serve warm.
