Description

A delicious and healthy blueberry lemon bread with no added sugar. Perfect for breakfast or a snack.


Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix almond flour, coconut flour, baking soda, and salt.
  3. In another bowl, whisk eggs, coconut oil, applesauce, vanilla, lemon zest, and lemon juice.
  4. Combine wet and dry ingredients. Fold in blueberries.
  5. Pour batter into the loaf pan. Bake for 45-50 minutes.
  6. Let cool before slicing.
