- 1 cup almond flour
- 2 tbsp melted butter
- 8 oz cream cheese, softened
- 1/2 cup sugar-free sweetener
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 1 tbsp instant coffee powder
- 1/4 cup hot water
- 1/2 cup sugar-free chocolate chips
- Cocoa powder for dusting
Instructions
- Mix almond flour and melted butter to form the crust. Press into the bottom of serving cups.
- Dissolve coffee powder in hot water and set aside to cool.
- Beat cream cheese, sweetener, and vanilla until smooth.
- Whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
- Layer the cheesecake mixture over the crust in the cups.
- Drizzle cooled coffee over the top.
- Sprinkle sugar-free chocolate chips and dust with cocoa powder.
- Refrigerate for at least 2 hours before serving.

- Use a sugar-free sweetener of your choice.
- For a stronger coffee flavor, increase the amount of instant coffee.
