Ingredients

Instructions
- Preheat oven to 375°F (190°C).
- Toss eggplant slices with olive oil, salt, pepper, monk fruit sweetener, garlic powder, and onion powder.
- Arrange slices in a baking dish.
- Sprinkle oregano and Parmesan cheese on top.
- Bake for 25 minutes until golden brown.
