- 1/4 cup coconut flour
- 1/2 cup monk fruit sweetener
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup sugar-free chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix almond flour, coconut flour, baking soda, and salt.
- In another bowl, cream butter and monk fruit sweetener until smooth.
- Add egg and vanilla extract to the butter mixture, mixing well.
- Gradually add dry ingredients to the wet mixture, stirring until combined.
- Fold in chocolate chips.
- Drop tablespoon-sized dough onto a baking sheet.
- Bake for 10-12 minutes or until edges are golden.
- Let cool before serving.
Notes
- Store in an airtight container for up to 5 days.
- For crispier cookies, bake an extra 1-2 minutes.
- Substitute coconut oil for butter if preferred.
