Description

Crisp and flavorful biscotti sweetened with monk fruit, perfect for a guilt-free treat.


Ingredients

Scale
  • 2 cups almond flour
  • 1/2 cup monk fruit sweetener
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped almonds

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix almond flour, monk fruit sweetener, baking powder, and salt.
  3. Add eggs and vanilla extract. Stir until a dough forms.
  4. Fold in chopped almonds.
  5. Shape dough into a log on the baking sheet. Bake for 25 minutes.
  6. Remove from oven, let cool for 10 minutes, then slice into 1-inch pieces.
  7. Place slices back on the baking sheet and bake for another 15 minutes, flipping halfway.
  8. Let cool completely before serving.
