Ingredients

- 1 whole chicken (3–4 lbs)
- 2 tbsp olive oil
- 1 tbsp monk fruit sweetener
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C).
- Pat the chicken dry with paper towels.
- In a small bowl, mix olive oil, monk fruit sweetener, garlic powder, onion powder, paprika, salt, pepper, and thyme.
- Rub the mixture evenly over the chicken.
- Place chicken in a roasting pan breast-side up.
- Roast for 1 hour 15 minutes or until internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before carving.
Notes
- Use a meat thermometer to ensure proper doneness.
- Adjust monk fruit sweetener to taste.
- For crispier skin, broil for the last 2-3 minutes.
