- 4 salmon fillets (6 oz each)
- 2 tbsp olive oil
- 1/4 cup monk fruit sweetener
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped (optional for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place salmon fillets on the baking sheet and drizzle with olive oil.
- In a small bowl, mix monk fruit sweetener, lemon juice, lemon zest, garlic powder, salt, and pepper.
- Brush the glaze evenly over the salmon fillets.
- Bake for 12-15 minutes or until salmon flakes easily with a fork.
- Garnish with fresh parsley if desired and serve immediately.
Notes
- Adjust sweetness by adding more or less monk fruit sweetener.
- For extra crispiness, broil for the last 2 minutes.
- Substitute honey or maple syrup if monk fruit is unavailable.
