Instructions
- Preheat oven to 350°F. Grease a loaf pan.
- Cream butter and monk fruit sweetener until fluffy.
- Add eggs one at a time, mixing well.
- Combine dry ingredients in a separate bowl.
- Gradually mix dry ingredients into wet mixture.
- Stir in lemon juice, zest, and vanilla.
- Pour batter into prepared pan.
- Bake for 50-55 minutes until golden.
- Cool before slicing.
