Ingredients

  • 1/2 cup almonds, chopped
  • 1/2 cup walnuts, chopped
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 2 tbsp monk fruit sweetener
  • 1 tbsp fresh ginger, grated
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 3 tbsp coconut oil, melted
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix oats, almonds, walnuts, pumpkin seeds, and sunflower seeds.
  3. In a small bowl, whisk monk fruit sweetener, grated ginger, cinnamon, salt, coconut oil, and vanilla extract.
  4. Pour the wet mixture over the dry ingredients and stir until evenly coated.
  5. Spread the mixture on the baking sheet in an even layer.
  6. Bake for 25-30 minutes, stirring halfway, until golden brown.
  7. Let cool completely before storing in an airtight container.
