Ingredients

- 2 cups all-purpose flour
- 1/4 cup monk fruit sweetener
- 1 tbsp baking powder
- 1/4 tsp salt
- 1/3 cup cold unsalted butter, cubed
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
- 1/2 cup milk
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, mix flour, monk fruit sweetener, baking powder, and salt.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Stir in cranberries and walnuts.
- In a separate bowl, whisk milk, egg, and vanilla extract.
- Add wet ingredients to dry ingredients. Stir until just combined.
- Turn dough onto a floured surface. Shape into a 1-inch thick circle.
- Cut into 8 wedges. Place on the baking sheet.
- Bake for 15-18 minutes until golden brown.
- Cool on a wire rack before serving.
Notes
- Do not overmix the dough for soft scones.
- Store in an airtight container for up to 3 days.
- Freeze unbaked scones for later use.
