Ingredients

  • 2 cups grated zucchini
  • 1 1/2 cups almond flour
  • 1/2 cup shredded cheddar cheese
  • 3 eggs
  • 1/4 cup melted butter
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Squeeze excess moisture from the grated zucchini.
  3. In a bowl, mix zucchini, almond flour, cheese, eggs, melted butter, baking powder, salt, and pepper.
  4. Pour the batter into the loaf pan and smooth the top.
  5. Bake for 45-50 minutes or until a toothpick comes out clean.
  6. Let it cool before slicing.
