Description

A delicious low-carb casserole made with stuffed peppers and cauliflower rice. Perfect for a healthy dinner.


Ingredients

Scale
  • 4 large bell peppers, diced
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups cauliflower rice
  • 1 cup shredded cheese
  • 1 can (14 oz) diced tomatoes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning

Instructions

  1. Preheat oven to 375°F.
  2. Cook ground beef, onion, and garlic in a skillet until browned.
  3. Add diced tomatoes, salt, pepper, and Italian seasoning. Simmer for 5 minutes.
  4. Mix in cauliflower rice.
  5. Layer diced peppers in a baking dish and top with beef mixture.
  6. Sprinkle cheese on top.
  7. Bake for 25-30 minutes until cheese is melted and bubbly.

Notes

  • Use any color bell peppers.
  • Substitute ground turkey for beef if preferred.
