A delicious low-carb casserole made with stuffed peppers and cauliflower rice. Perfect for a healthy dinner.
Ingredients

- 4 large bell peppers, diced
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups cauliflower rice
- 1 cup shredded cheese
- 1 can (14 oz) diced tomatoes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
Instructions
- Preheat oven to 375°F.
- Cook ground beef, onion, and garlic in a skillet until browned.
- Add diced tomatoes, salt, pepper, and Italian seasoning. Simmer for 5 minutes.
- Mix in cauliflower rice.
- Layer diced peppers in a baking dish and top with beef mixture.
- Sprinkle cheese on top.
- Bake for 25-30 minutes until cheese is melted and bubbly.
Notes
- Use any color bell peppers.
- Substitute ground turkey for beef if preferred.
- Store leftovers in the fridge for up to 3 days.
