A quick and healthy dish featuring shrimp and zucchini cooked in a zesty lemon garlic sauce.
Ingredients

- 1 lb shrimp, peeled and deveined
- 2 medium zucchinis, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 lemon, juiced
- 1 tsp lemon zest
- 1/4 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a skillet over medium heat.
- Add shrimp and cook for 2 minutes per side until pink. Remove and set aside.
- In the same skillet, add zucchini and sauté for 3-4 minutes until tender.
- Add garlic, red pepper flakes, salt, and black pepper. Cook for 1 minute.
- Return shrimp to the skillet, add lemon juice and zest. Toss to combine.
- Garnish with fresh parsley before serving.

- Use fresh shrimp for best flavor.
- Adjust red pepper flakes for preferred spice level.
- Serve with cauliflower rice for a complete low-carb meal.
