Ingredients

Scale
  • 1 head cauliflower, grated into rice
  • 1 tbsp olive oil
  • 1 lb ground beef or turkey
  • 1 tbsp taco seasoning
  • 1 avocado, sliced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup shredded cheese
  • 1/4 cup sour cream
  • 1 lime, cut into wedges

Instructions

  1. Heat olive oil in a pan over medium heat. Add the grated cauliflower and cook for 5 minutes until tender. Set aside.
  2. In the same pan, cook the ground beef or turkey with taco seasoning until browned and fully cooked.
  3. Divide the cauliflower rice between two bowls.
