- 1/2 cup sunflower seeds
- 1/2 cup pumpkin seeds
- 1/4 cup flaxseeds
- 1/4 cup sesame seeds
- 1/4 cup chia seeds
- 1 cup almond flour (or coconut flour for nut-free)
- 1 tsp baking powder
- 1/2 tsp salt
- 4 large eggs
- 1/4 cup melted coconut oil
- 1/4 cup water
Instructions
- Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
- Mix all dry ingredients in a large bowl.
- Add eggs, coconut oil, and water. Stir until well combined.
- Pour batter into the loaf pan and smooth the top.
- Bake for 45-50 minutes, or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store in an airtight container for up to 5 days.
- For a lighter texture, let the batter sit for 10 minutes before baking.
- Adjust salt to taste if using salted seeds.
