- 1 large head cauliflower, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 tbsp butter
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 2 green onions, sliced
Instructions
- In a large pot, melt butter over medium heat.
- Add chopped cauliflower and sauté for 5 minutes.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until cauliflower is tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in heavy cream, garlic powder, onion powder, salt, and pepper.
- Simmer for another 5 minutes.
- Serve hot, topped with shredded cheddar, crumbled bacon, and green onions.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For extra flavor, add a dash of hot sauce or smoked paprika.
- Substitute vegetable broth for a vegetarian version.
