Description

A rich and creamy keto-friendly loaded cauliflower soup that tastes even better than potato soup. Perfect for a low-carb diet.


Ingredients

Scale
  • 1 large head cauliflower, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 2 green onions, sliced

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add chopped cauliflower and sauté for 5 minutes.
  3. Pour in chicken broth and bring to a boil.
  4. Reduce heat, cover, and simmer for 15 minutes or until cauliflower is tender.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in heavy cream, garlic powder, onion powder, salt, and pepper.
  7. Simmer for another 5 minutes.
  8. Serve hot, topped with shredded cheddar, crumbled bacon, and green onions.
