- 1 large head cauliflower, chopped into florets
- 2 tbsp butter
- 1/4 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 4 slices cooked bacon, crumbled
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped chives
Instructions
- Steam cauliflower florets until tender, about 10 minutes.
- Drain well and transfer to a food processor.
- Add butter, heavy cream, garlic powder, salt, and pepper. Blend until smooth.
- Transfer to a bowl and stir in sour cream and half the cheddar cheese.
- Top with remaining cheese, crumbled bacon, and chives.
- Serve warm.
Notes
- For extra creaminess, add more butter or cream.
- Store leftovers in the fridge for up to 3 days.
