- 2 cups riced cauliflower
- 1 cup shredded cheddar cheese
- 1/4 cup diced jalapeños
- 1 large egg
- 1/2 cup almond flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix riced cauliflower, cheddar cheese, jalapeños, egg, almond flour, garlic powder, onion powder, salt, and pepper in a bowl.
- Form the mixture into small bite-sized balls and place them on the baking sheet.
- Bake for 20-25 minutes until golden and crispy.
- Let cool slightly before serving.
Notes
- For extra crispiness, broil for 1-2 minutes at the end.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in the oven or air fryer for best texture.
