Description

A low-carb, high-protein casserole combining spicy buffalo chicken with roasted cauliflower.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 4 cups cauliflower florets
  • 1/2 cup buffalo sauce
  • 1/4 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss cauliflower florets with melted butter, garlic powder, onion powder, salt, and pepper.
  3. Spread cauliflower in baking dish and roast for 15 minutes.
  4. Mix shredded chicken with buffalo sauce.
  5. Remove cauliflower from oven, top with chicken mixture.
  6. Sprinkle cheese evenly over top.
  7. Bake for 20 minutes until cheese is bubbly.
  8. Drizzle with ranch dressing before serving.
