Description
A low-carb, high-protein casserole combining spicy buffalo chicken with roasted cauliflower.
Ingredients

- 2 cups cooked chicken, shredded
- 4 cups cauliflower florets
- 1/2 cup buffalo sauce
- 1/4 cup ranch dressing
- 1 cup shredded cheddar cheese
- 2 tbsp butter
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Toss cauliflower florets with melted butter, garlic powder, onion powder, salt, and pepper.
- Spread cauliflower in baking dish and roast for 15 minutes.
- Mix shredded chicken with buffalo sauce.
- Remove cauliflower from oven, top with chicken mixture.
- Sprinkle cheese evenly over top.
- Bake for 20 minutes until cheese is bubbly.
- Drizzle with ranch dressing before serving.
Notes
- Store leftovers in airtight container for up to 3 days.
- Adjust buffalo sauce quantity for preferred spice level.
- Substitute blue cheese dressing for ranch if desired.
