Description
A low-carb pasta alternative using hearts of palm for a creamy Alfredo dish.
Ingredients

- 2 cans hearts of palm, drained and sliced into noodles
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sauté for 1 minute.
- Pour in heavy cream and simmer for 2 minutes.
- Stir in Parmesan cheese until melted and smooth.
- Add hearts of palm noodles and toss to coat evenly.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, add a pinch of red pepper flakes.
- Use freshly grated Parmesan for best texture.
- Store leftovers in an airtight container for up to 2 days.
