- 2 large sweet potatoes, peeled and cubed
- 2 tbsp butter or vegan butter
- 1/4 cup erythritol
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/4 cup milk (or unsweetened almond milk)
Instructions
- Boil sweet potatoes in water for 15-20 minutes until tender.
- Drain and return to the pot.
- Add butter, erythritol, salt, and cinnamon.
- Mash until smooth, adding milk gradually.
- Adjust sweetness or seasoning if needed.
- Serve warm.

- Use a hand mixer for smoother texture.
- Add more milk if a creamier consistency is desired.
