Description

A nutritious and energizing breakfast bowl made with dates for natural sweetness and a variety of nutritious toppings.


Ingredients

Scale
  • 2 cups rolled oats
  • 4 cups water or plant-based milk
  • 1 cup pitted dates, chopped
  • 1/2 cup almonds, chopped
  • 1/4 cup chia seeds
  • 1 teaspoon cinnamon
  • 1 banana, sliced
  • 1/4 cup pumpkin seeds
  • Fresh berries for serving

Instructions

  1. Combine oats, water or milk, dates, and cinnamon in a pot.
  2. Bring to a boil, then reduce heat and simmer for 5 minutes.
  3. Stir in chia seeds and cook for another 2 minutes.
  4. Remove from heat and let stand for 2 minutes.
  5. Divide the oatmeal into bowls.
  6. Top with banana, almonds, pumpkin seeds, and berries.
  7. Serve warm.

Notes

  • Use Medjool dates for the best sweetness.
  • You can prepare the oats the night before and refrigerate.
  • Add a splash of milk when reheating if the oats thicken too much.
