Ingredients

- 2 cups rolled oats
- 4 cups water or plant-based milk
- 1 cup pitted dates, chopped
- 1/2 cup almonds, chopped
- 1/4 cup chia seeds
- 1 teaspoon cinnamon
- 1 banana, sliced
- 1/4 cup pumpkin seeds
- Fresh berries for serving
Instructions
- Combine oats, water or milk, dates, and cinnamon in a pot.
- Bring to a boil, then reduce heat and simmer for 5 minutes.
- Stir in chia seeds and cook for another 2 minutes.
- Remove from heat and let stand for 2 minutes.
- Divide the oatmeal into bowls.
- Top with banana, almonds, pumpkin seeds, and berries.
- Serve warm.
Notes
- Use Medjool dates for the best sweetness.
- You can prepare the oats the night before and refrigerate.
- Add a splash of milk when reheating if the oats thicken too much.
