- 1 cup pitted dates
- 1 cup boiling water
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chopped almonds
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
- Soak dates in boiling water for 10 minutes, then drain and mash.
- In a bowl, cream butter and sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla and mashed dates.
- Whisk flour, baking powder, baking soda, and salt together.
- Gradually fold dry ingredients into the wet mixture.
- Fold in chopped almonds.
- Pour batter into the prepared pan and bake for 30-35 minutes.
- Let cool before slicing.
Notes
- Use Medjool dates for best sweetness.
- Store in an airtight container for up to 3 days.
- Top with yogurt or honey if desired.
