- 1 cup cauliflower rice

- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced onion and cook until softened.
- Add minced garlic and ground beef, cooking until browned.
- Stir in taco seasoning and cauliflower rice.
- Cook for 5-7 minutes until cauliflower is tender.
- Sprinkle shredded cheese on top and let it melt.
- Garnish with diced tomatoes and cilantro.
