- 1/4 cup powdered erythritol
- 1 tsp vanilla extract
Instructions
- Line a small loaf pan with parchment paper.
- Melt coconut oil in a microwave-safe bowl.
- Stir in peanut butter, erythritol, and vanilla until smooth.
- Pour mixture into prepared pan and refrigerate for 2 hours.
- Cut into squares before serving.
Notes
- Store in an airtight container in the refrigerator.
- For firmer fudge, freeze for 30 minutes before cutting.
